Ingredients

cup
erythritol
I use Swerve granular
1/2
cup
kerry gold butter
salted

cup
macadamia nuts
chopped
1
tsp
vanilla
Instructions
Combine swerve, butter and vanilla in a saucepan and heat on medium until mixture comes to a boil. Make sure to stir constantly.
Reduce heat to med-low and continue boiling for 5 minutes or when candy thermometer reaches the hard crack stage.
Candy mixture will turn an amber color.
Remove from heat and stir in nuts.
Stir and coat nuts completely and then pour out onto a parchment lined baking sheet.
Spread out evenly.
Let brittle cool completely on the countertop at room temp.
Once cooled and hardened, Brittle can be broken into pieces by hand.
Keep in a cool, dry location until served.
Notes
Traditional brittle is made with Spanish peanuts and this recipe works very for that. Another great option is to make it with roasted shaved almonds.
