Place all of the ingredients (except tomatoes) into a large bowl and toss until everything is coated with olive oil .
Place contents of bowl onto a full sized, foil lined baking sheet. Spread Evenly.
Bake at 375°F for 15 minutes then add tomatoes and stir to make sure everything heats evenly.
Cook for another 10 minutes.
Check meat with meat thermometer to make sure food is cooked thoroughly 165°F.
Notes
Chopped garlic and other fresh herbs are a great addition to this recipe. You can also substitute other low carb vegetables that are in season such as: asparagus, green peppers or brussels sprouts.
