Equipment

  • parchment paper

Ingredients

  • 1 cup erythritol I use Swerve granular
  • 1/2 cup kerry gold butter salted
  • 1 cup macadamia nuts chopped
  • 1 tsp vanilla

Instructions

  • Combine swerve, butter and vanilla in a saucepan and heat on medium until mixture comes to a boil. Make sure to stir constantly.
  • Reduce heat to med-low and continue boiling for 5 minutes or when candy thermometer reaches the hard crack stage.
  • Candy mixture will turn an amber color.
  • Remove from heat and stir in nuts.
  • Stir and coat nuts completely and then pour out onto a parchment lined baking sheet.
  • Spread out evenly.
  • Let brittle cool completely on the countertop at room temp.
  • Once cooled and hardened, Brittle can be broken into pieces by hand.
  • Keep in a cool, dry location until served.

Notes

Traditional brittle is made with Spanish peanuts and this recipe works very for that.  Another great option is to make it with roasted shaved almonds.
