Traditional Holiday Nut Brittle – Low Carb Version

  • 1 cup erythritol (I use Swerve granular)
  • 1/2 cup kerry gold butter (salted)
  • 1 cup macadamia nuts (chopped)
  • 1 tsp vanilla
  1. Combine swerve, butter and vanilla in a saucepan and heat on medium until mixture comes to a boil. Make sure to stir constantly.

  2. Reduce heat to med-low and continue boiling for approximately 5 minutes.

  3. Candy mixture will begin to turn an amber color.

  4. Add in chopped macadamia nuts

  5. Stir and coat nuts completely and then pour out onto a parchment lined baking sheet.

  6. Allow mixture to cool slightly and then put into fridge to cool completely.

  7. Once cooled and hardened, Brittle can be broken into pieces by hand.

  8. Keep in a cool, dry location until served.
