Ingredients
- 1 cup erythritol I use Swerve granular
- 1/2 cup kerry gold butter salted
- 1 cup macadamia nuts chopped
- 1 tsp vanilla
Instructions
- Combine swerve, butter and vanilla in a saucepan and heat on medium until mixture comes to a boil. Make sure to stir constantly.
- Reduce heat to med-low and continue boiling for 5 minutes or when candy thermometer reaches the hard crack stage.
- Candy mixture will turn an amber color.
- Remove from heat and stir in nuts.
- Stir and coat nuts completely and then pour out onto a parchment lined baking sheet.
- Spread out evenly.
- Let brittle cool completely on the countertop at room temp.
- Once cooled and hardened, Brittle can be broken into pieces by hand.
- Keep in a cool, dry location until served.
Notes
Traditional brittle is made with Spanish peanuts and this recipe works very for that. Another great option is to make it with roasted shaved almonds.
