I am amazed at how many people hear my story and say that they could never do it. “I can’t cut the carbs”, “It just isn’t worth it” or “it is too hard to keep track”, I hear it all the time.
Well, it really depends on how bad you want it. Are you struggling with your health? Do you want to lose weight? Do you want to have a better life?
You have two choices.
1. Stay unhealthy and miserable and deal with it.
2. Commit to the change and become healthier and happier.
It really is that simple. You have a choice.
Here is a very simple way to start. Find a few really simple low carb recipes and try them. I started with a sheet pan supper. It has a lot of my favorite foods and flavors and is very simple, quick and easy to keep low carb.
Here is a recipe for one that I use all the time. You can switch out your favorite low carb vegetables or adjust to what is seasonal in your area. Protein can be switched out too. It is also delicious with cubed chicken.
Keto Sheet Pan Supper
Equipment
- baking sheet pan lined with foil
- food scale and measuring cups and spoons
Ingredients
- 1 Cup Broccoli Florets
- 1 Cup Cauliflower Florets
- 1 Cup Zucchini sliced Sliced
- 1 Cup White mushrooms sliced Sliced
- 1 Cup Grape Tomatoes Whole
- 1 lb Smoked Sausage Sliced
- 2 Tablespoons Olive Oil Extra Virgin
- 1/8 tsp Salt
- 1/8 tsp pepper
Instructions
- Pre-heat oven to 375°F
- Place all of the ingredients (except tomatoes) into a large bowl and toss until everything is coated with olive oil .
- Place contents of bowl onto a full sized, foil lined baking sheet. Spread Evenly.
- Bake at 375°F for 15 minutes then add tomatoes and stir to make sure everything heats evenly.
- Cook for another 10 minutes.
- Check meat with meat thermometer to make sure food is cooked thoroughly 165°F.
